What is “Good Food”?

Believe it or not, the simple act of eating food can be a complicated thing.

Does it really matter what we consume? Should food be a source of pleasure for the palate, or is it merely fuel for the physical body?

Pop Tarts may taste good, but should we eat them? What about Rice Cakes? They taste like nothing, but do we really want a diet like that? Is blandness the only cure for unhealthy indulgence?

Furthermore, does it matter where our food comes from? Do we care whether what we put in our mouth grew from a plant or was processed in one?

At the Well & Table we like to think deeply about these matters. One of our greatest commitments is to prepare food that not only tastes delicious, but whose “goodness” extends beyond taste alone.

One way we will do this is by creating a seasonal menu consisting of ingredients that are not only fresh, but also local. The greens in our salads will be grown in local gardens. The bread for our sandwiches will be baked in local ovens. Our steak and poultry and pork will come from local farms. Our seafood will come from local waters and local distributors. Our wines, ales, and spirits will come from local wineries, breweries, and distilleries.

By making this farm-to-table commitment, we will not only be providing delicious meals, but we will also be doing our part to support the local economy and minimize our carbon footprint.

In a word, food that is home-grown — rather than being processed on some factory farm across the country and then loaded onto a truck and shipped here — is “good” in the truest and most robust sense of that word.

And the fact that it’s delicious makes it even better.
